A contemporary vision of Empordà cuisine

This is the essence of Castell Peralada Restaurant and the legacy that  our chef Xavi Sagristà left us. Now Javi Martínez, with whom he shared experiences for 15 years, takes over the kitchen of Castell Peralada Restaurant and will continue to share his recipes and his vision of Empordà cuisine to keep on delighting us.

The other half of this tandem is, of course, the head waiter and sommelier Toni Gerez. With his enormous charisma and passion, he will continue to keep alive the gastronomic experience that he created with Xavi Sagristà and that led them to achieve a Michelin Star and a Sol Repsol.

The space occupied by the restaurant is privileged. Located inside a 14th century castle, and designed by Sandra Tarruella, it has several rooms located in the towers and a terrace in front of the lake with views of the impressive gardens. It is the ideal place to enjoy an authentic sensory experience.

The Chef & the Maître

The dishes prepared at Castell Peralada Restaurant are the result of the passion, enthusiasm and dedication of a team led by two great professionals Toni Gerez and Javi Martínez.

Javi Martínez is the generational successor to Xavi Sagristà. After 15 years cooking together and learning everything of his master taught him, he will continue Sagristà's culinary tradition, giving a creative twist to centuries-old traditional cuisine with avant-garde dishes rooted in the quality of locally products.

Toni Gerez handles things at the front of the house, he is an expert in the restaurant’s deep, carefully considered wine list and a cheese cart featuring some of the most outstanding products on the market today. He was part of the team at the beginning of El Bulli and together with Xavi Sagristà they ran the Hotel Restaurant Mas Pau for more than 20 years, where they received a Michelin Star, which they kept for 20 years, along with other awards in the field of gastronomy.
